Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1 jalapeno pepper, diced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 2 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (4.5 ounce) can diced green chiles
- 1/2 pound uncooked fideo pasta
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
1. Heat the olive oil in a large pot over medium heat. Add the onion, bell pepper, garlic, and jalapeno pepper and cook until the vegetables are tender, about 5 minutes. Stir in the cumin and oregano.
2. Pour in the chicken broth and add the diced tomatoes, black beans, and green chiles. Raise the heat to high and bring the soup to a boil.
3. Reduce the heat to medium-low, cover the pot, and simmer for 15 minutes.
4. Add the fideo pasta to the soup and stir to combine. Cover the pot again and continue to simmer for 10 minutes, stirring occasionally.
5. Remove the pot from the heat and stir in the cilantro. Season with salt and pepper to taste.
