Ingredients for Instant Pot Zucchini Soup
2 tablespoons olive oil
1 cup chopped onion
2 cloves garlic, minced
3 cups chicken or vegetable broth
2 large zucchini, chopped
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/2 cup heavy cream or coconut milk
Instructions for Instant Pot Zucchini Soup
Set the Instant Pot to "Saute" and allow it to heat up.
Add the olive oil, onion and garlic and sauté for about 2 minutes, stirring often.
Add the chicken or vegetable broth and stir to combine.
Add the zucchini, basil, oregano, salt and pepper and stir to combine.
Secure the lid, set the valve to sealing and set the Instant Pot to manual high pressure for 3 minutes.
When the timer is finished, carefully do a quick release of the pressure.
Remove the lid and stir in the cream or coconut milk.
Using an immersion blender, blend the soup until it is smooth and creamy.
