So let's get started! ## Grilled Chicken Cajun Pasta Salad Recipe ### Ingredients: - 4 boneless skinless chicken breasts - 2 tablespoons Cajun seasoning - 2 tablespoons olive oil - 8 ounces uncooked fusilli pasta - 2 ears of corn, shucked - 1 red bell pepper, diced - 1 yellow bell pepper, diced - 1 jalapeno pepper, seeded and diced - 1/2 cup diced red onion - 2 tablespoons chopped fresh cilantro - 1/3 cup olive oil - 2 tablespoons lime juice - 1 teaspoon garlic powder - 1/2 teaspoon cumin - 1/2 teaspoon chili powder - Salt and pepper, to taste ### Directions: 1. Preheat grill to medium-high heat. 2. Rub chicken breasts with Cajun seasoning and olive oil. 3. Grill chicken for 4-5 minutes per side, or until cooked through. Let cool and cut into cubes. 4. Bring a large pot of salted water to a boil. Add fusilli pasta and cook for 8-10 minutes, or until al dente. 5. While pasta is cooking, add corn to the grill and cook for 5 minutes, or until lightly charred. Let cool and cut kernels off the cob. 6. In a large bowl, combine cooked pasta, grilled chicken, grilled corn, diced bell peppers, jalapeno pepper, red onion, and cilantro. 7. In a small bowl, whisk together olive oil, lime juice, garlic powder, cumin, chili powder, salt and pepper. 8. Pour dressing over salad and toss to combine. 9. Serve chilled or at room temperature.
