Instructions

  1. In a medium bowl, mash the black beans with a fork or potato masher until most of the beans are mashed.
  2. Add the crushed tortilla chips, cilantro, egg, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir to combine.
  3. Form the mixture into 8 patties.
  4. Heat the oil in a large skillet over medium-high heat. Add the patties and cook for 3 to 4 minutes per side, or until golden brown and crispy. Transfer to a plate.
  5. To serve, spoon 1/4 cup of the mole salsa onto each plate. Place a black bean cake on top and top with a dollop of sour cream. Serve with the remaining mole salsa.
