Ingredients
- 1 can black beans, drained and rinsed
- 1/2 cup crushed tortilla chips
- 1/4 cup chopped fresh cilantro
- 1 egg
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup vegetable oil
- 2 cups mole salsa, divided
- 1/2 cup sour cream
Instructions
- In a medium bowl, mash the black beans with a fork or potato masher until most of the beans are mashed.
- Add the crushed tortilla chips, cilantro, egg, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir to combine.
- Form the mixture into 8 patties.
- Heat the oil in a large skillet over medium-high heat. Add the patties and cook for 3 to 4 minutes per side, or until golden brown and crispy. Transfer to a plate.
- To serve, spoon 1/4 cup of the mole salsa onto each plate. Place a black bean cake on top and top with a dollop of sour cream. Serve with the remaining mole salsa.
