Ingredients

  • 1 (14-ounce) package extra-firm tofu
  • 2 tablespoons reduced-sodium soy sauce
  • 2 teaspoons sesame oil
  • 2 tablespoons honey
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1 red bell pepper, diced
  • 1 cup sliced mushrooms
  • 1/2 cup chopped scallions
  • 1/4 cup chopped fresh cilantro
  • 1/2 teaspoon crushed red pepper flakes
  • Salt and pepper, to taste
  • 1 head butter lettuce, leaves separated

Instructions

  1. Drain the tofu and pat it dry with paper towels. Cut the tofu into cubes and place them in a shallow dish.
  2. Combine the soy sauce, sesame oil, and honey in a small bowl. Whisk together and pour the mixture over the tofu. Turn the cubes to evenly coat all sides. Set aside for 10 minutes.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Add the garlic and ginger and cook until fragrant, about 1 minute. Add the bell pepper, mushrooms, scallions, and red pepper flakes. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
  4. Add the tofu and any remaining marinade to the skillet. Cook, stirring occasionally, until the tofu is browned and caramelized, about 10 minutes. Season to taste with salt and pepper.
  5. To serve, spoon the tofu mixture into lettuce cups and top with cilantro. Enjoy!
