Roasted Greek Potatoes With Feta Cheese

Ingredients:

  • 2 pounds small potatoes, scrubbed and cut into wedges
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 ounces feta cheese, crumbled
  • 1/4 cup chopped fresh parsley

Instructions:

1. Preheat oven to 400 degrees F (200 degrees C).

2. Place potatoes in a large bowl and drizzle with olive oil. Add garlic, oregano, basil, red pepper flakes, salt, and black pepper; toss to coat.

3. Spread potatoes onto a baking sheet in a single layer. Roast in preheated oven for 25 minutes, stirring occasionally.

4. Sprinkle with feta cheese and roast for an additional 10 minutes, or until potatoes are golden brown and tender.
