Let's get started! ## Fried Chicken ### Ingredients - 4-5 pounds of chicken parts (thighs, legs and wings) - 2 cups of buttermilk - 2 teaspoons of salt - 2 teaspoons of black pepper - 2 teaspoons of garlic powder - 2 teaspoons of paprika - 2 cups of all-purpose flour - 1 cup of cornstarch - 2 tablespoons of baking powder - Canola oil, for frying - Hot sauce, optional ### Preparation #### Step 1 In a large bowl, combine the buttermilk, salt, pepper, garlic powder, and paprika. Place the chicken pieces in the buttermilk mixture and toss to coat. Cover the bowl with plastic wrap and refrigerate for at least one hour, or overnight. #### Step 2 In a large bowl, mix together the flour, cornstarch, baking powder, and 2 teaspoons of salt. Remove the chicken from the buttermilk mixture and coat each piece in the flour mixture. #### Step 3 Fill a large skillet or Dutch oven with 2 inches of oil and heat to 350°F. Line a baking sheet with paper towels and set aside. #### Step 4 Carefully add the chicken pieces to the hot oil and fry for 8-10 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the oil and place on the paper towel-lined baking sheet. Serve with hot sauce, if desired. Enjoy!
